if u include china type steamboat ala hotpot, u can try 谭鱼头@Liang Court.
Ala carte type but good stuff especially their tomato base soup

no lah....the tomato soup base one not oily at all, i had the chicken soup/tomato soup.....but place rather ex....hehe
average spending per person at least 60-70 bucks assuming u not going for their kobe beef or whatever
very different from the china hotpot places u find in SG

Chocs, I actually like Akashabu at Kallang. Not typical steamboat but soup is clear and healthy for you as well. Really yummy...
