I first pan sear the lamb rack... About 2mins on each side.... Bone side down first.... Then oven proof dish... 80 degrees celcius for 1 hour.... Low temp.... Remember to rest the meat before slicing.

..bone side dwn first...meaning put the bone below huh? meat thicker mah...not longer 2 cook meh....not put meat below meh....i dunno...i only talk...i dunno...beta admit...

....OT a bit... Magaritas in demsey does very delicious Lamb Shank.....melts in mouth....no need cook....no need wash...no need worry abt bone side up or dwn...heaven.......

I haven't fully settled down yet mah - have had to put up with a steady stream of well-meaning (sure, sure) relatives coming over and staying over.... Besides, you're hardly in Singapore, wanna invite you over also difficult! Not my fault lah!
